Sorry - just noticed this didn't publish as scheduled..so it's a day late...
This weekend, I went to make up my big batch of steel cut oats for my weeks worth of breakfasts...only to discover the canister was empty. No steel cut oats for me this week.
Instead, I decided to try making a sweeter version of quinoa to have for breakfast and am officially now in love with Quinoa Porridge...and the girlies loved it too! So I am sharing the recipe with y'all.
Quinoa For Breakfast
1 cup Quinoa
1.5 cups water
1.5 cups almond milk
1 tablespoon butter
1 tablespoon vanilla
Place all ingredients in a sauce pan and bring to a boil. Lower heat to simmer until the majority of the liquid has been absorbed and the quinoa is cooked to your desired tenderness.
Top with your favourite oatmeal toppings (I usually go with a TBSP of peanut butter and a quarter cup of raisins plus almond milk) and enjoy.
The first day I ate this - my daughters mooched half the bowl from me. The second day - they each got their own bowls...
