MOMday: Marvelous Meatless Chili

As a vegetarian and a mom who hates cooking, I like any recipe that is quick and easy to throw together.   This chili is amazing.  Even my meat eating friends adore it and come back for seconds (and thirds).  It's not spicy (though you can certainly make it so) - it just has an amazing blend of flavours and is a truly hearty meal.   Best of all - my kids love it.  They gobble down those beans faster than anything (well, except KD - but I blame that on my pregnancy)!


1 can diced or whole tomatoes (796ml)
1/2 cup bulgur wheat (availble in bulk food sections)
3 tbsp vegetable oil
2 large onions chopped
3 cloves garlic minced
2 tsp each dried chili powder, cumin and dried oregano
2 sweet green peppers diced
1 tsp minced jalapeno peppers (optional - I never add these)
1 19 oz can of kidney beans
1 19 oz can of black beans
1 12 oz can kernel corn
1/2 cup tomato paste
hot pepper (optional), salt and pepper to taste

-->drain juice from tomatoes into saucepan, reserve tomatoes. Stir bulgur into juice, bring to boil, reduce heat and simmer for 5 mins, set aside
-->in meantime, heat oil in large saucepan, add onions, green peppers, garlic and spices and saute until soft. (I usually grate the onions and peppers in my food processor to save time and tears)
-->stir in tomatoes, bulgur mixture, jalapeno (if desired), beans, corn, tomato paste and 1/2 cup water. Add hot pepper sauce and S&P to taste.
-->cover and simmer 10 mins or more to desired thickness.

This recipe makes 6 - 2 cup servings,  Each serving has 392 calories, 9 grams of fat, 67 grams carbohydrates, 17 grams of protein.
