Recipe: Grecian Spinach Squares

I had this at a Pampered Chef party about 10 years ago and fell in love.  I make it with light versions of everything possible so the calorie count is off.  I usually cut it into 12 squares and say 300 calories per piece when I journal them. I'll add a pic when they are done.

Grecian Spinach Squares
(so yummy - warm or cold)

1 package dry Knorr Vegetable Soup Mix
1/2 cup mayonnaise
1/2 cup sour cream
1 package frozen chopped spinach
1 can artichoke hearts
1 can water chestnuts
2 packages refrigerated Pilsbury crescent roll dough
4 ounces Feta cheese
1 clove Garlic -- crushed
1/4 cup Parmesan cheese

Spread unrolled crescent dough on cookie sheet and roll to cover pan. Bake 12 minutes in a 350 degree F oven.

Mix mayonnaise, sour cream, and soup mix together. Chop artichoke hearts and water chestnuts. Add to mayo mixture. Grate Feta cheese. Add to mixture. Drain spinach and add to mixture. Add garlic to mixture and mix well.

Spread mixture over the baked crescent roll layer and sprinkle with Parmesan cheese.

Return to oven and bake at 350 degrees F for 15 minutes.

Cut into squares and serve warm. This is a bit like spinach dip but much easier to make and eat.

Yield: 24 squares
